Magical Unicorn Cocktails

Rainbows and unicorns aren’t just for kids anymore. From enjoying pastel unicorn toast to warming up with pretty unicorn hot chocolate, it seems everyone is embracing the legendary creature these days. Rainbows, sparkles, and glitter are all wonderful but there is something that can make them even better. That’s wine!

Yes, we believe it’s time for some unicorn wine. You read that right. Unicorns just pranced over the rainbow from the kids table to your next 21-and-over soirée.

Unicorn Wine

The rainbow unicorn cocktail starts with a pretty pink sparkling wine! Our Blush Bubbly is the perfect bright and fruity base for your seriously fun party drink. You’ll combine the wine with vanilla infused cranberry-raspberry juice. It’s a twist on the mimosa, a magical rainbow unicorn mimosa twist.

Colorful Candy Toppings

Now, let’s give that drink a magical unicorn makeover with a rainbow explosion of sweet toppings.

Prepare your glass by spreading a thin layer of strawberry frosting around the rim. We used Pillsbury, but you could make your own if you’d like. Then, dip the frosted glass into rainbow sprinkles.

Add a swirl of homemade whipped cream on top. We used the Wilton 1M pastry tip for this. Canned whipped cream isn’t strong enough to hold the candy. Plus, it doesn’t taste nearly as good as the real stuff.
Add a pink swirly lollipop for your unicorn horn. We used strawberry flavored pops from Party City.

Candy corns make adorable unicorn “ears.” We picked up these pink strawberry flavored candies at American Candle near our winery in the Pocono Mountains of Pennsylvania. If you’re not local, we found some others on Amazon.

These colorful Twizzlers make the perfect magical rainbows to finish off your unicorn cocktail.

1/2 cup rainbow sprinkles
1 cup cranberry-raspberry juice
1/4 teaspoon vanilla extract
2 cups Blush Bubbly sparkling wine
1 cup homemade whipped cream
4 pink swirly lollipops
8 pink candy corns
4 rainbow licorice twists

Directions
1. Spread a thin coating of strawberry frosting on the outside of the top of each glass. Dip the frosting into rainbow sprinkles.

2. Combine cranberry-raspberry juice and vanilla extract. Pour 1/4 cup of the vanilla infused juice into each glass. Fill each glass to the top with Blush Bubbly.

3.  Pipe a swirl of homemade whipped cream onto the top of each cocktail. Place a pink lollipop into each drink. Add two pink candy corn “ears” to each drink. Top with rainbow licorice twists. Serve immediately.

Note: You can turn this into a children’s unicorn party mocktail by replacing the sparkling wine with sparkling grape juice.
